The Story Behind the Bean
Our Peruvian coffee comes from the dedicated hands of the San Ignacio Agrarian Cooperative (COOPAFSI), a powerhouse of 330 small-scale producers nestled in the lush Cajamarca region of Northeastern Peru. Since 1969, this cooperative has not only been producing exceptional coffee but also empowering women farmers and building a sustainable future for their communities.
Located high in the Andes, at altitudes ranging from 1,000 to 1,800 meters, these
farms thrive in the buffer zones of protected natural areas. Here,organic and Fair Trade practices aren’t just certifications—they’re a
way of life. Farmers embrace preservation to protect the delicate ecosystems around them, ensuring both wildlife and coffee flourish side by side.
From handpicking the ripest cherries to a meticulous 18-hour anaerobic fermentation process and slow solar drying on raised
beds, every step is handled with care and precision. The result? A clean, consistent coffee with a smooth, rich flavor.
But COOPAFSI is about more than great coffee. This cooperative offers microfinance
services, agricultural training, and community development initiatives, helping producers build brighter, more sustainable futures. Their unique approach, especially their emphasis on “women-grown” coffee, sets them apart as both a champion of quality and equality.
